JAVVARISI VADAM

Javvarisi vadam, also known as Sago Vadam or Sabudana Vadam, is a traditional South Indian snack made from sago (tapioca pearls). The preparation involves soaking sago pearls in water until they become soft and translucent. These soaked pearls are then mixed with water, green chilies, cumin seeds, and salt to form a thick batter. The batter is spread into thin rounds or small blobs on a clean cloth or plastic sheet and left to dry in the sun for several days until they become hard and brittle. Once dried, javvarisi vadams can be stored and later deep-fried until crispy. They are enjoyed as a crunchy accompaniment to meals or as a standalone snack.
